Shaved Strawberry Balsamic Brussels Sprout Salad
Featuring: Meyer Lemon Extra Virgin Olive Oil and Strawberry Balsamic Vinegar
Ingredients
- For Dressing
- 1/3 Cup of Meyer Lemon extra virgin olive oil
- 4 tbs Strawberry Balsamic vinegar (split)
- 1 tbs pure maple syrup
- 2 tps Dijion Mustard
- 1 clove garlic minced
- Kosher salt and black pepper to taste
- For Salad
- 1 lb Brussel sprouts ends trimmed
- 1 large Honey crisp apple chopped
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds
- 1/3 cup shredded Parmesan cheese
- Kosher salt and black pepper to taste
Instructions:
First, make the maple mustard dressing. In a small bowl or jar, whisk together the Meyer Lemon extra virgin olive oil, lemon juice, 2 tbs Strawberry balsamic vinegar, pure maple syrup, mustard, and garlic. Season with salt and pepper and set aside.
