Greek Yogurt Parfaits with Blueberry Balsamic

Greek Yogurt Parfaits

Featuring: Blueberry Balsamic

Ingredients

  • 1 cup fresh blueberries
  • 3 Tbsp Blueberry Balsamic Vinegar
  • Large container plain or honey Greek yogurt
  • Granola, store-bought or homemade
  • Garnish: lemon zest

Instructions

Heat blueberries with vinegar for 5 minutes to sauce consistency.  Let cool.

From bottom up, layer:

  • Blueberry sauce
  • Yogurt
  • Granola
  • Blueberry sauce
  • Yogurt
  • Granola
  • Blueberry sauce and fresh blueberries
  • Top with Lemon Zest

You can substitute Raspberry Balsamic Vinegar for the Blueberry, and raspberries for the blueberries. Garnish with mint.  Or, use Pomegranate Balsamic Vinegar with Pomegranate seeds and minced jalapeno for your garnish.
